The ultimate hangover brunch

A completely delicious cure: rosemary french toast, corn beef hash, chipotle pear slaw, crispy onions + fried hen's egg.

INGREDIENTS

Chipotle pear slaw

1 cup corned beef hash

French toast batter

METHOD

  1. Heat the grape seed oil in a large fry pan over high heat.
  2. Pan fry the corn beef, cooked potato and chopped shallots until golden brown.
  3. Season with salt pepper and set aside.
  4. Whisk the 2 eggs, milk and rosemary.
  5. Dip the bread into the French toast batter and allow soaking for 2 minutes.
  6. Melt the butter in a fry pan over medium to high heat.
  7. Remove the bread from the batter and pan fried in the melted butter until golden brown on both sides.
  8. Once cooked, remove from the pan and set aside with the corn beef hash.
  9. In a mixing bowl combine the chipotle and pear, radish and red onion julienne.
  10. To assemble cut the French toast in half to create four triangles.
  11. Place on a plate and then cover with the pan seared corn beef hash. Then top with the chipotle pear slaw, followed by the crispy onions and lastly a fried hen’s egg.
