1)Preheat oven to 350F
2)Poke raw beets with a fork and roast for approximately an hour.
3)Once cooled enough to handle, peel (with gloves on), then cut into pieces and add to food processor. Pulse until minced.
4)Turn oven down to 300F
5)Sift together flour, cocoa, baking powder, salt and set aside.
6)Place butter & chocolate in the bowl of a double boiler until completely melted.
7)Once melted, remove from double boiler and add sugar, beets, vanilla and eggs to
8)Fold dry ingredients into wet ingredients, and mix together.
9)Pour and scrape bowl into a 9 inch baking pan and bake for approximately 25 minutes. The brownies are best allowed to rest for a few hours and then cut.
