INGREDIENTS
- 2 oranges
- 4 clementines
- 1 lemon
- 2 limes
- 1 pink grapefruit
- 1 pomelo
- 8 (sliced thin on red chili peppers) cumquat
- 2 sliced avocadoes
- 1 finely sliced fennel
- 1 finely sliced red onion
- pitted sun dried black olives
- 1 bunch (leaves picked) mint
- roasted marcona almonds
- olive oil
- salt and pepper
METHOD
- Peel all the citrus except for the cumquat.
- Slice the oranges and clementine. Clean all the pith away from the pomelo and wedge nicely. Slice the grapefruit, lemon and lime. Then slice the cumquat with skin on.
- Place on a platter making sure to mix all the citrus and avocado slices, sprinkle with the finely red onions, shaved fennel, chili peppers, mint, black olives and marcona almond.
- Season with salt and pepper and drizzle with olive oil (a lot)
