Orange, Ginger Scented Beef Kabobs

500 grams diced braising beef 1 cup diced green zucchini 1 cup diced red pepper 1 cup shiitake mushroom caps 1 cup diced onion 2 tbsp grape seed oil Marinade 1 cup orange juice 1 tbsp chopped fresh ginger 1 whole star anise 1 clove finely chopped garlic 1 tbsp chopped fresh mint 1 tbsp soya sauce 1/2 tbsp hoisin sauce
Method
- Place the beef, orange juice, ginger, anise, garlic, mint, soya sauce and hosin sauce in a zip lock bag. Toss around to mix well and place in the fridge overnight.
- Remove the beef from the marinade and build the beef kabob using the vegetables.
- Sear the kabobs using the grape seed oil in a pan over high heat.
- Once brown, place in a 400F degree oven for 5 to 7 minutes.
- Season with salt and pepper, then serve.
