If you’re not a fan of tofu, you can also make this with chicken, pork, beef, or seafood.
Miso Noodle Box
200g buckwheat noodles
200-300g marinated tofu
1oz sesame oil
4 oyster mushrooms
2 baby bok choy
Julienned peppers
Handful of almonds or peanuts
1) In a medium sauce pan, fry tofu and nuts with sesame oil.
2) Add vegetables when tofu is golden brown.
3) Finish with pre-cooked noodles and remaining marinade. Cook until heated through.
4) Marinade: garlic, ginger, touch of honey, miso paste, white wine, soya sauce and sesame oil
5) Serve in a take-out noodle box with chop sticks and garnish with parsnip crisps, coriander and chives.
Notes: Do not use the marinade in the mixture if cooking with anything other than tofu.
