Niagara Fruit Crepe

Niagara Fruit Crepe

Ingredients:

1 cup strawberries

1 cup fresh cherries

2 whole peaches

3 whole apricots

1 vanilla bean

2 cups ice wine (can sub orange juice)

1/2 cup basil leaves

4 whole crepes

8 long chives

Method:

Chop all the fruit to about a 1 inch dice and place in a large bowl.

Strip the seeds from the vanilla bean and place both the seeds and pod into the fruit along with the ice wine and basil.  Allow to macerate for at least one hour in the fridge. 

Dip the chives in a pot of hot water to soften and then remove and cool in the fridge.  Strain the fruit, lay out the 4 crepes and fill the fruit in the center of each crepe. 

Fold like a parcel, wrap with the soften chives a tie to secure.  Place on a plate and serve with the sauce strained from the macerated fruit.
