Mini quiche

Ingredients:

  • 1/3 cup green onion
  • 1/3 cup pepper
  • 1/3 cup grated cheddar
  • 1/3 cup ham
  • 2 cherry tomatoes
  • 3 eggs
  • 1/2 cup milk
  • 18 pre-made mini pastry shells

Method: 

Preheat oven to 375 degrees.

In a large bowl, toss together onion, pepper, cheese, ham and tomatoes. Lay out the shells on a baking sheet. Spoon a bit of the ham and cheese mixture into each shell.

In another bowl, whisk eggs and milk. Pour over the ham and cheese. Place in the oven for 15 minutes until they’re set. Allow to cool. Can be packed up in an air tight container and placed in the freezer.
