Breakfast casserole

Ingredients:

  • 18 eggs beaten
  • 6 oz milk
  • 2 lb peameal bacon, sliced
  • 1 cup sauteed spinach
  • 2 cups sauteed leeks
  • 1 cup caramelized onions
  • 2 cups buckwheat oats
  • 4 oz melted butter
  • 3 oz maple syrup
  • Salt and pepper

Method:

In a large ceramic baking dish, layer peameal, spinach, leeks and caramelized onions.

Season whisked eggs, add milk, and pour into pan.

In a separate bowl, toss oats, butter and syrup. Place gently on top and bake for 90 minutes at 250F or until firm in the middle.
