Peanut butter chocolate balls

Ingredients:

  • 1/2 cup creamy natural peanut butter
  • 3 Tbsp butter, softened
  • 1 cup confectioner’s sugar
  • 8 oz chocolate, chopped (or chocolate chips)

Method

In a bowl, mix peanut butter, sugar and butter together until they form a dough. Cover in plastic wrap and place in the fridge for at least 15 minutes.

Using your hands, roll the dough into 1 inch balls. If the dough gets too sticky as you’re working just pop it back in the fridge for a few minutes. Place the balls on a parchment lined baking sheet. Place the baking sheet in the freezer for at least half an hour to chill. You want them very cold and firm.

Melt the chocolate very gently. Don’t overheat! Pour the chocolate into a shallow bowl. Using a toothpick, pick up each ball, dip it into the chocolate and then let excess drip off. Place the chocolate dipped ball onto a clean parchment lined baking sheet. Refrigerate until you serve.

Makes 25 to 30 balls
