Crispy chickpeas

Prep time: 5 minutes
Total cooking time: 50 minutes
Serves: 4
Per Serving: 167 calories,  6 g protein, 18 g carbs, 9 g fat, 5 g fibre, 262 mg sodium.

Ingredients:

  • 540 mL can chickpeas, drained  and rinsed
  • 2 tbsp olive oil
  • 1/4 tsp ground coriander
  • 1/4 tsp salt
  • 1/2 cup packed chopped cilantro

Method:

Preheat oven to 400°F. Pat chickpeas dry with paper towel.

Toss with oil, coriander and salt on a large baking sheet. Spread out in a single layer.

Roast in centre of oven, gently shaking sheet every 15 minutes, until golden and crisp, or for about 40 to 45 minutes.

Transfer to a bowl  to cool slightly. Stir in cilantro.
