Spice things up this holiday season with these cookies from the Sweet Potato Chronicles!

Spiced gingerbread men

Ingredients:

  • 2 1/2 cups spelt flour, plus more for rolling
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp cinnamon
  • 1 tsp coarse salt
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup unsulfured molasses

Ingredients for the icing:

  • 2 tbsp. fresh lemon juice
  • 1 1/3 cups confectioners’ sugar

Method:

In a medium bowl, whisk the flour, baking soda, ginger, cloves, cinnamon, and salt. In a separate bowl, cream together the butter and sugar with a hand mixer until creamy.

Beat the egg and then add. Mix until combined. Add molasses until combined.

With the mixer on low, gradually had your flour blend and mix until combined.

Remove your dough from the bowl and then wrap it plastic wrap and place in the refrigerator to firm, at least an hour and up to 3 days.

Preheat oven to 350F. Place rack on the top third and bottom half of the oven.

On a lightly floured surface, roll out dough to 1/4 inch thick. With a sharp knife, cut dough into 2-inch wide triangles.

Place on a cookie sheet lined with parchment paper 1-inch apart from each other. Bake until cookies are firm and lightly browned on edges, 10 to 12 minutes.
