Blackened codfish sandwich with tartar sauce

Serves 4

Ingredients:

4 x 6 oz codfish filets
4 brioche buns
2 tbsp vegetable oil
8 pieces leaf lettuce
4 slices cheddar

Blackening spice
1 tbsp sweet paprika
1 tbsp salt
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne
1/2 tsp black pepper
1/2 tsp dried thyme
1/2 tsp dried oregano

Tartar
1 cup mayonnaise
1/4 cup dill pickle, finely diced
1 tsp capers, chopped
2 tsp lemon juice
1 tsp lemon zest
1 tsp Dijon
1 tsp chopped dill
1 tsp chopped tarragon
1 tsp salt
1/3 tsp black pepper

Method:

Combine ingredients for tartar sauce in a bowl and place in the fridge.

Combine blackening spice in a mixing bowl and generously pat down fillets.

Pre-heat a large frying pan on medium heat and, once hot, add vegetable oil.

Lay down fillets and cook for 2-3 minutes on one side and flip. Top each filet with one slice of cheese.

Remove from pan once cooked, about 2-3 minutes.

Slice buns and brush top and bottom with tartar sauce.

Lay 2 pieces of lettuce on the bottom of each bun and top each bun with a fillet. Serve immediately.
