Fragrant garam masala
6 cinnamon sticks, 1-inch long
2 tsp cardamom seeds
1 tsp clove
1 tsp mace
1/2 tsp nutmeg
1. Dry roast all ingredients except for the nutmeg until fragrant.
2. Combine all ingredients and blend to make a fine powder.
3. Pass through a fine sieve and store in a airtight container.
