Masala oatmeal

Serves 4

Total time: 35 minutes

Ingredients:

3 eggs
1 1/2 cups vegetable broth
1 cup water
1 cup quick oats
1 tbsp Madras curry paste
1 tsp canola oil
1 small onion, finely chopped
1 pint cherry tomatoes
1 garlic clove, minced
1 tsp grated ginger
1/4 tsp cumin seeds
1/8 tsp salt
1 cup cilantro leaves
1 red chili, thinly sliced

Method: 

  1. Whisk eggs with broth, water, oats and curry paste in a medium saucepan and set over medium-low. Cook, stirring often, until very creamy, about 15 minutes.
  2. Heat a medium non-stick frying pan over medium. Add oil, then onion, tomatoes, garlic, ginger, cumin seeds and salt. Cook until tomatoes soften, 5 to 8 minutes.
