Morning eggs Mexican style

Mairlyn adds a new flavour to your morning eggs!




  • In a medium frying pan over medium heat add the oil. Toss in zucchini and sauté for 1-2 minutes. Add tomatoes and sauté for another minute. Stir in black beans.
  • Using a wooden spoon of a heat safe spatula make 2 holes in the vegetables/bean mixture and then crack an egg into each hole or opening.
  • Cover the pan with a lid and cook the egg until your desired yolk doneness. Remove from the heat, sprinkle equally with the cheese and the green onion, cover and let the cheese melt.
  • To serve – divide it in half and gently lift up the egg and the vegetable/bean mixture and place in a shallow bowl or a plate. Add hot sauce if desired.
