Lamb shepherd's pie with sweet potato

Nothing beats a warm and hearty shepherds pie on a cool Fall day.

INGREDIENTS

Sweet Potato Mash

METHOD

  1. Preheat the oven to 400°F. Place sweet potatoes on a baking sheet and roast for 20 – 25 minutes.
  2. In a preheated cast iron, add onions and cook till golden brown. Add the ground lamb and cook over medium heat for 5-7 minutes. Add carrots, celery and all the spices to pan and cook all the way through. Season with salt and pepper as you go.
  3. Transfer the sweet potatoes to a large bowl and add all the ingredients and mash together.
  4. Top the filling with the sweet potato mash while it is still in the cast iron.
  5. Place the Shepherd’s Pie in the oven and broil for 10 minutes or until the edges crisp up.
  6. Serve after resting for 10 minutes.

I am in the process of making this right now. This recipe needs to be edited. In the ingredients is mentions mushrooms, but in the method area, it does not mention when to add the mushrooms or how to chop them, slice them, keep them whole and is the cup whole or chopped?? It also says 25 min for the sweet potato. Mine took 1 1/2 hours before it is soft enough to mash for 2 large sweet potatoes. Nor anywhere does it state the method for the celery and carrot…. chop/dice/ etc. My common sense says to chop everything, however not everyone is a home chef and recipes should be written clearer to accommodate all levels. Also, are we cooking the onion in the cast iron pan with no oil or fat? Just onions in the cast iron? I am adding a splash of olive oil I think. I look forward to seeing how this turns out once all cooked. Hate to be a critic, but this recipe needs a bit of attention. Thanks!
