Pan-seared sea bass with citrus salsa

Comfort food without the carbs! Chef Chef Massimo shares the lighter side of Italian food.



  1. Place the onions, ginger, lime zest and olives in a bowl, season with salt and pepper and set aside for a few minutes.
  2. Then add orange and grapefruit segments, chives and some chopped cilantro, season to taste and douse with olive oil.
  3. Pan sear the fish filet and once cooked top with the citrus salsa.
  4. Serve the fish with steamed potatoes.
