Pre-heat a pan on hi-heat, to it add the oil and immediately add the chicken, stir and make sure to break up the chicken as much as possible.
Once the juices have dried up add the garlic and the ginger and sauté for a minute add the peppers.
Add the hoisin, soy, vinegar, cook for a minute and taste for correct seasoning, serve at once with a stack of lettuce leaves. Garnish with matchstick potatoes, some toasted peanuts or crispy cereal.
