METHOD

  1. Place tomato sauce on the stove on low medium heat.
  2. Combine all ingredients for the meatballs, except oil, in a bowl and form into 1.5” balls.
  3. Pre-heat a pan to medium heat and sear until golden brown all around, 5-6 minutes.
  4. Place meatballs directly into tomato sauce and allow to cook for 15-20 minutes.
  5. In a large frying pan on medium heat add 2 tsp olive oil. Sautee zucchini for 2-3 minutes, ensuring it does not cook through.
  6. Transfer a portion of zucchini to a plate and top with sauce and meatballs.
