Shrimp and White Wine Sauce with Zucchini Pasta

Shrimp and White Wine Sauce with Zucchini Pasta

Ingredients:

6 medium zucchini (shredded)

2 clover of garlic

1 tbsp olive oil

1 lb medium sized fresh shrimp

1/4 cup white wine

1/2 tsp salt

1 tbsp Worcestershire sauce

2 tbsp butter

Juice from 1/2 fresh lemon

1/4 cup of parmesan cheese

Note: Zucchini noodles were made with a kitchen gadget called the spiralizer. If you do not have a spiralizer, please use a mandolin or a vegetable peeler to make long flat zucchini noodles. Directions:

 

1. Prepare zucchini as above.

2. Chop garlic cloves.

3. Place garlic in olive oil 2-3 minutes.

4. Add in shrimp, white wine, zucchini noodles and garlic.

5. Sauté for 3-5 minutes.

6. Add in salt, Worcestershire sauce, butter, and fresh squeezed lemon.

7. Maintain medium heat for 2 minutes.

8. Sprinkle with parmesan cheese and serve.
