Raspberry fool

Ingredients:

3 cups (750 mL) fresh local raspberries, divided

1 cup (250 mL) 0% MF Greek style yogurt

1 cup (250 mL) lemon Mediterranean Greek style yogurt

Method:

1) Rinse raspberries under cold running water, place on paper towels to air dry.

2) Using a potato masher, gently mash 1 cup (250 mL) raspberries. Place in a large bowl; add the rest of the raspberries.

3) Whisk together the two yogurts and then gently fold in the raspberries.

4) Spoon into either 6 glass martini glasses or any other small glass serving dish OR transfer to a smaller bowl and refrigerate for at least 1 hour. Serve.

Makes 3 cups

One serving = ½ cup (125 mL)
