Roasted squash & Padano wrapped in bacon with Vincotto

Ingredients

1
butternut squash, cut 2” long by ½” thick
1 cup
Padano cheese, grated
12 slices
bacon
2 tbsp
butter, melted
salt
pepper
drizzle
vincotto

Instructions

  1. Dress the squash with salt, pepper and butter. Toss well and place on a non-stick baking sheet nicely laid out like soldiers.
  2. Bake at 375°F until tender making sure to rotate on all four sides to give it a crust.
  3. Remove from the oven and roll each squash stick in Padano cheese.
  4. Wrap the sticks in thinly sliced bacon and fry in a pan until crisp.
  5. Serve warm drizzled with Vincotto.
