Blueberry and coconut chia pudding

This delicious pudding offers a dairy-free alternative to yogurt that is a great source of fibre and protein. Prepare the night before for an easy breakfast!

Ingredients

4 oz
almond milk, or coconut milk
2 tbsp
chia seed
1/2 tsp
honey
1/4 tsp
vanilla extract
1 tbsp
hemp seed, raw, shelled
1 tbsp
blueberries
1 tsp
coconut, unsweetened shredded (optional)

Instructions

  • In a deep bowl, combine the milk, chia seeds, honey and vanilla. Stir until combined and refrigerate for 2 to 3 hours. You may want to stir the mixture a couple times while it’s in the fridge.
  • When set, top with hemp seeds, blueberries and coconut.
