The perfect potato rosti

The perfect side dish for your dinner by the campfire.

Ingredients

2
medium Yukon gold potatoes, grated
3
sliced scallions
salt and pepper
3 tbsp
extra virgin olive oil

Instructions

  1. Toss all ingredients into a bowl and mix together
  2. Place cast iron pan on top of coals of a campfire
  3. Wait until pan is at high heat almost smoking
  4. Add mixture and spread out eventually
  5. Cook for 4 minutes or until golden and flip
  6. Return to heat and cook until soft
  7. Remove from heat and serve
  8. Garnish with sour cream and chopped chives
