Protein-packed blueberry pancake

Soak up the morning with these blueberry flapjacks loaded with protein, fibre and tons of delicious.

Ingredients

2
eggs
2 tablespoons
ground flax seed, or flax meal
1/4 cup
blueberries
1/2 teaspoon
cinnamon
dash
of coconut oil, for cooking

Instructions

  1. In a small mixing bowl combine eggs and flax to form a batter. Add blueberries and cinnamon.
  2. Drop into a pre-warmed pan with a dash of oil (coconut, canola or olive-melt on low heat and wipe excess with paper towel).
  3. Cook on medium heat till edges look to be setting and then flip and cook through.
  4. Enjoy with a dollop of Greek yogurt on top or a drizzle of maple syrup.
