Dr. Joey’s black bean brownies

These chocolatey bites are flourless and so easy to make and healthier with the addition of black beans and coconut oil!

Ingredients

1 15 oz can
black beans, drained and rinsed
2
large organic eggs
3 tbsp
coconut oil, melted
3/4 cup
cocoa powder
1/4 tsp
salt
1 tbsp
pure vanilla extract
1/2 cup
coconut sugar, well ground
1 1/2 tsp
baking powder

Instructions

  • Preheat oven to 350 degrees F
  • Lightly grease small muffin tins.
  • Combine all ingredients and puree until smooth
  • Distribute batter into muffin pan and smooth top with spoon.
  • Bake for 20-25 minutes or until tops are dry and edges pull away from sides.
  • Remove from oven and let cool for 30 minutes before removing from pan and enjoy!
