Papa Paolo’s tiramisu

Ingredients

1 cup
brewed, Italian espresso
marsala wine
3 cups
mascarpone
1 ½ cups
condensed milk
cocoa powder

Instructions

Pour the espresso into a shallow dish, and allow to cool. When cool, add the Marsala wine. The amount of Marsala wine depends on how strong you want that flavor to be. We add a good splash, as we love the taste! In a large bowl, whisk the mascarpone and condensed milk together until thick and free of lumps. You don’t want it to be runny. The mixture should be as smooth and silky as us! Now briefly soak the ladyfingers in the espresso and Marsala mixture. Turn them a couple of times so they are nicely coated but not soggy. They should absorb the mixture and take on a pale coffee colour but remain firm. Cover the bottom of a large serving bowl- we like tot use a clear glass bowl, to show off the different layers of the tiramisu- with a layer of ladyfingers. Spoon on some of the mascarpone mixture, and smooth it over the top and to the edges of the bowl. Now sprinkle cocoa powder over the top. Make sure to cover all the mascarpone mixture- don’t be shy about the amount of cocoa you use. Now repeat this process until all the ladyfingers and mascarpone mixture are used. You should have 3-4 layers, ending with the mascarpone mixture and cocoa powder. Cover with plastic wrap, and chill in the fridge overnight. It will be perfect for serving the next day and enjoying with the whole family.   Serves 4-6
