Cauliflower shepherd’s pie

Ingredients

1 head
roughly chopped cauliflower, (removing center)
1 tablespoon
avocado oil
½
onion, diced
2
diced celery, ribs
2
peeled carrots, cut into 1 inch pieces
1 lb.
ground chicken or turkey
2
cloves garlic, minced
1 teaspoon
sea salt
1 teaspoon
oregano
1 (15 oz.) can
tomato sauce, (make sure there is no sugar added!)
½ cup , shredded
cheddar cheese, shredded
2 tablespoon
fresh parsley, chopped

Instructions

  1. Preheat oven to 350 F.
  2. Steam cauliflower for about 10-15 minutes, until soft.
  3. While cauliflower is steaming, heat avocado oil on medium-high in a large pan and sauté onions for about 3-4 minutes, until translucent. Add celery and carrots and sauté for another couple minutes, until beginning to soften. Add ground turkey and cook until browned. Add garlic, salt and oregano. Add tomato sauce. Heat throughout.
  4. Once cauliflower has softened, drain all water and mash.
  5. Spoon meat mixture into the bottom of a casserole dish and cover with prepared mashed cauliflower.
  6. Sprinkle with shredded cheese and bake for 10-15 minutes until cheese is melted.
  7. Before serving, sprinkle with fresh parsley.
