Grilled avocados with tomato & corn salsa

Ingredients

semi-ripe to ripe avocados, sliced in half and seed removed
1 tbsp
vegetable oil
1 tsp
sea salt
1 tsp
fresh cracked black pepper

Salsa

1
roma tomato, cored and diced
2
yellow tomatoes, cored and diced
1
orange tomato, cored and diced
1
green tomato, cored and diced
2 ears
corn
1 tbsp
fresh chopped parsley
1 tbsp
fresh chopped cilantro
1 tsp
sea salt
3/4 tsp
fresh cracked black pepper
1
red chili, minced

Instructions

  1. Pre-heat BBQ to medium high heat.
  2. Brush each avocado half with vegetable oil and season with salt and pepper.
  3. Place cut side down on the BBQ and gently press down to ensure avocados is completely in contact with grill.
  4. Remove after one minute or until you are satisfied with grill marks, approximately 1-2 minutes.
  5. Combine all ingredients for salsa in a mixing bowl.
  6. Fill avocados with salsa and serve.
