Sloppy Joes

Add some fibre to your sloppy joes to get a fabulous protein lunch for the whole family.

Ingredients

.450 kg
extra lean ground beef
1 medium
diced onion
2 cloves
minced garlic
2 tsp
dried oregano leaves
1 tsp
dried basil leaves
1/2 tsp
cracked black pepper
1/4 tsp
iodized salt
1/2 cup
soft sun dried tomatoes, cut into thin slices

can crushed tomatoes
540 mL
rinsed and drained can lentils
1 Tbsp
Worcestershire sauce

Instructions

  • In a large skillet over medium high heat brown meat, breaking it up as it cooks into small pieces. Add onion and garlic and cook together for 2-3 minutes or until the onion starts to become soft.
  • Add oregano, basil, pepper and salt and mix in well.
  • Add sun dried tomatoes, crushed tomatoes, drained lentils and Worcestershire. Stir in well. Cover with a lid, reduce to simmer and cook for 25 minutes stirring occasionally.
  • To serve: Preheat oven to 325°/160°C slice whole wheat buns in half, place cut side onto the oven rack, toast in the oven to desired brownness. Scoop ¾ cup (180 mL) of the Sloppy Joe mixture onto one half of the bun. Top with the other half and serve with a side salad or Cole slaw.
