Ingredients

2-3lb
peeled medium sweet potatos
1/4 cup
extra virgin olive oil
1 stick
melted butter
1 pinch
kosher
1 pinch
black pepper
12
springs thyme

Instructions

  1. Slice your sweet potatoes into coins about 2 mm thick.
  2.  Toss in a bowl with olive oil and butter. 
  3. Season with salt pepper and thyme. 
  4. Stack your coins into a muffin tin and bake at 375 until golden and tender. (42-48 minutes) 
  5. Remove and let rest for 6 minutes and serve. I already have some here.
