Homemade Pretzels

Ingredients

1 tbsp
yeast
3/4 tbsp
sugar
2 cups
warm water
5 cups
flour
1 tbsp
kosher salt
1
(beaten, with a splash of water) egg
3 tbsp
(for garnish) course kosher salt
10 cups
(for boiling) water
2/3 cups
baking soda
3 tbsp
(extra virgin) olive oil

Instructions

  1. In the stand mixer bowl combine warm water, sugar and yeast. Let sit for 5 minutes.
  2. Add 1 tablespoon olive oil, flour and 1 tablespoon salt. Mix on low speed, then to medium for 6 min. Dough should start to pull away from the bowl. If it doesn’t slowly add a little more flour.
  3. Remove dough. Olive oil the bowl and place dough back in. Wrap with saran and let rise for 1 hour in a warm spot. Mixture should double in size.
  4. Place 10 cups of water on the stove with baking soda and bring to a simmer.
  5. Preheat oven to 450 degrees.
  6. Remove dough from bowl and divide by 10. Roll out each dough to 2 foot long ropes. Twist and tie into pretzel shape.
  7. Poach the pretzels for 45 seconds and place onto baking sheets. Brush with egg wash and garnish with course kosher salt.
  8. Bake for 14 minutes or until golden brown. Best served with a spicy mustard or a warm cheese sauce!
