Ingredients
1 tbsp
yeast
3/4 tbsp
sugar
2 cups
warm water
5 cups
flour
1 tbsp
kosher salt
1
(beaten, with a splash of water) egg
3 tbsp
(for garnish) course kosher salt
10 cups
(for boiling) water
2/3 cups
baking soda
3 tbsp
(extra virgin) olive oil
Instructions
- In the stand mixer bowl combine warm water, sugar and yeast. Let sit for 5 minutes.
- Add 1 tablespoon olive oil, flour and 1 tablespoon salt. Mix on low speed, then to medium for 6 min. Dough should start to pull away from the bowl. If it doesn’t slowly add a little more flour.
- Remove dough. Olive oil the bowl and place dough back in. Wrap with saran and let rise for 1 hour in a warm spot. Mixture should double in size.
- Place 10 cups of water on the stove with baking soda and bring to a simmer.
- Preheat oven to 450 degrees.
- Remove dough from bowl and divide by 10. Roll out each dough to 2 foot long ropes. Twist and tie into pretzel shape.
- Poach the pretzels for 45 seconds and place onto baking sheets. Brush with egg wash and garnish with course kosher salt.
- Bake for 14 minutes or until golden brown. Best served with a spicy mustard or a warm cheese sauce!
