Adzuki bean dip

Perfect chilled and served with corn chips!

Ingredients

¼ cup
low fat mayonnaise
1
for zest, lime
2 Tbsp
fresh lime juice
2 tsp
hot sauce
2
crushed cloves garlic
¼ - ½ tsp
(your call) chipotle chili powder
¼ tsp
table salt
2 cups
cooked adzuki beans
1
diced avocado
1 cup
chopped cilantro
1 cup
cooked corn
4
sliced thinly green onions
For serving, whole grain corn chips

Instructions

  1. In a medium bowl, whisk together: mayo, lime zest, lime juice, hot sauce, garlic, chili powder and salt.
  2. Add adzuki beans, avocado, cilantro, corn and green onion. Gently mix together. Store in the fridge for at least 1 hour and serve with corn chips.
