Fresh Tomato and Corn Salsa with Clair Tansey

Ingredients

3 medium
ripe tomatoes, finely diced
1 small
yellow onion, finely chopped
1/4 cup
fresh lime juice
1
fresh red chili, minced
1/2 tsp
salt
1 cup
corn kernels, thawed if frozen
1/2 cup
fresh cilantro, chopped

Instructions

  1. Combine tomatoes, onion, lime juice, chili (if using) and salt in a medium bowl. Let stand 5 minutes
  2. Stir in the corn and cilantro
  3. Make ahead: This keeps well in the fridge for up to 12 hours
