Sweet potato and quinoa salad

Ingredients

2 tbsp
olive oil
3 sprigs
fresh thyme
1/2 tsp
kosher salt
1 1/2 tbsp
nutritional yeast

garlic clove
1 1/2 cup
broccoli
1/2 cup
red onions, chopped
1 1/2 cups
sweet potatoes

Chickpeas

1/2 cup
canned chickpeas
1-2 tbsp
olive oil
1/4 tsp
salt
1 tsp
curry powder
1/3 cup
onions, chopped
2 spigs
fresh thyme

Quinoa

2/3 cups
quinoa
1 1/4 cups
water
1/4 tsp
salt

Instructions

  1. For the roasted sweet potatoes, bake for 30 mins, turn over at the 15 min mark.
  2. Drizzle the broccoli with a little olive oil and sprinkle a little salt and roast for 20 minutes.
  3. Put the cooked quinoa in a bowl and incorporate, the roasted sweet potatoes, curried sautéed chickpeas, roasted broccoli, and raw chopped red onions.
