Vegetable grain salad

A simple veggie salad, featuring nutritious grains.

Ingredients

2 tablespoons
red wine vinegar
1/4 teaspoon
salt
1/4 teaspoon
sugar
3 tablespoons
extra virgin olive oil
2 cups
Big Batch whole grains
1 cup
chopped cucumber
1 cup
cherry tomatoes, halved
1/2 cup
chopped celery
1/2 cup
chopped fresh parsley
1/2 cup
chopped pitted kalamata olives

Instructions

  1. Whisk vinegar with salt and sugar in a large bowl. Whisk in olive oil.
  2. Stir in whole grains, cucumber, cherry tomatoes, celery, parsley and olives.
