Sexy chickpea vegan chocolate cookie

Ingredients

1/2 cup
almond or cashew butter
1 can
garbanzo beans (chickpeas), drained, rinsed and dried
1 tsp
vanilla extract
1/4 cup
raw honey
1/4 tsp
baking soda
1/2 tsp
baking powder
2 pinches
salt
1 1/4 cup
vegan chocolate chips

Egg Replacement

1 tbs
ground Flaxseed
2 1/2
lukewarm water

Instructions

  1. Egg replacement: mix and let sit for 5 minutes
  2. Place ALL Ingredients except the chocolate chips into a food processor and blend until everything is well smooth.
  3. Spoon 12-16 cookies onto a baking sheet and bake for 15-20 minutes
  4. Enjoy Eating 1 to 2 Sexy Chickpea cookies following a high intensity (45-60 minute) workout to restore depleted glycogen.  Have a yummy snack that won’t pack on pounds!
