Strawberry, cucumber, and herb bruschetta

Perfect for an after-school snack, these bruschetta bites are so refreshing and can be made in under 10 minutes!

Ingredients

1 cup
strawberries, cut into 1cm cubes
1/2 cup
mini cucumbers, cut into 1cm cubes
1/2 cup
cherry tomatoes, cut into 1cm cubes
1
shallot, cut into 1 cm cubes
2 tbsp
basil, (Greek if possible)
1 tbsp
chopped chives
2 tbsp
chopped Italian parsley
3 tbsp
olive oil
1 tbsp
white balsamic vinegar
zest and juice of 1
lemon
salt and pepper, to taste
1
baguette, cut into thin slices
shaved parmesan, or other hard cheese

Instructions

  1. Preheat oven to 400°F.
  2. Oil and season the baguette slices.
  3. Place on a cookie sheet and toast in the oven for 5 to 7 minutes.
  4. Put the fruits, vegetables and herbs in a bowl. Add the oil, balsamic vinegar, and lemon zest and juice. Add seasonings and mix well.
  5. Place one spoonful of mixture onto each toasted baguette slice and sprinkle with cheese shavings.
  6. Repeat and enjoy.
