Zucchini roll ups

Makes  6-8
Roll up some sliced avocados and garden peppers for a refreshing and delightful treat. This vegan sushi is the perfect snack to satisfy your mid-afternoon cravings.

Ingredients

Sliced peppers
Sliced celery
Sliced avocado
Green beans
1
zucchini
Low fat cream cheese, or hummus

Instructions

Rinse and pat dry the zucchini. Cut off ends. Using a potato peeler cut long slices lengthwise. Spread a thin layer of either low fat cream cheese or humus along the zucchini. Place three slices of whatever vegetable you have. Roll up tightly as if it were a sushi roll. Stand it upright and continue with the rest of the zucchini.
