Edamame guacamole

Makes  3 cups (750 mL)
This edamame guacamole is rich and creamy. Serve with crackers and fresh cut veggies for a healthy afternoon snack.

Ingredients

avocados
1
lime, juiced
1 cup (250 mL)
shelled edamame, cooked and mashed
1/2
medium onion, diced
1 tbsp (15 mL)
chopped cilantro
1/2 tsp (2 mL)
salt

Instructions

  1. In a medium bowl, roughly mash the avocados with a fork. Mix in the lime juice and edamame. Then stir in the onion, cilantro and salt. Taste and add more salt or cilantro, depending on personal preference.
  2. Cover with plastic wrap, pressing down against the guacamole, and refrigerate for an hour.
