Chef Stefano’s Cavatelli alla Gigi

Ingredients

½
finely sliced Onion
4 tbsp
grated Parmesan Cheese
4 cloves
finely chopped Garlic
¼ cup
White Wine
1 tbsp
chopped Flat-Leaf Parsley
½ tsp
grated Nutmeg

Instructions

  1. Cook cavatelli in a large saucepan of boiling, salted water.
  2. In a pan, heat olive oil and sauté mushrooms until golden. Add prosciutto and let cook a few minutes. Then add onion and garlic.
  3. Deglaze with white wine and let reduce.
  4. Add the sauce and nutmeg to the pan. Heat and stir.
  5. Add cooked cavatelli to the sauce, mix and serve with grated parmesan cheese.
