Classic Guinness stew

Celebrate St. Patrick's Day with this traditional Irish stew from Chef Randy Feltis.

Ingredients

2 lb
large diced leg of lamb
2
small carrots, diced
2
small parsnips, diced
12 cloves
garlic
12
pearl onions, peeled
2
celery stalks, small dice
2 tsp
flour
2 tbsp
olive oil
1/2 pint
Guinness
1/2 can
cola
750-mL
beef stock
fresh thyme
salt and pepper

Instructions

Toss large diced lamb with flour, salt and pepper. In a hot pan sear with olive oil until browned. Add all veggies and sweat. Deglaze with Guinness then cola, reduce by half and top with stock. Simmer on low roll for 1.5 – 2 hours, adjust seasoning and serve. Garnish with the traditional Irish champ mashed potato and crispy parsnips!
