Grilled Lemon & Herb Shrimp Taco Bowl

Ingredients

1 lb
shrimp
2 tsp.
garlic
2 tsp.
Grapeseed oil
1
lemon
2 tsp.
parsley
1 cup
black beans
1 cup
corn
2
avocados
1
jalapeno
2
radishes
2 cups
Brown rice, cooked
2
Red peppers

Sour Cream Mixture

3/4 cup
Sour cream
1 tsp.
Smoked paprika

Instructions

Method:
  1. Pre-heat grill to medium heat. In a mixing bowl combine shrimp, 2 tsp oil, 1 tsp lemon zest, 2 tsp lemon juice, 1 tsp parsley, 2 tsp garlic, salt and pepper. Place shrimp on grill and cook for 1-2 minutes per side until shrimp are cooked through. Remove from grill and sprinkle with remaining parsley.
  2. Peel, de-seed and dice avocado, set aside.
  3. De-seed jalapeno, finely dice and add to avocado. Thinly slice radish.
  4. Add paprika to sour cream and mix well, set aside.
  5. To assemble add brown rice to a bowl and spread it out evenly. Then add the following items in sections: Shrimp, black beans, corn, avocado, radish and top with sour cream.
