Pad thai from scratch

Ingredients

lb Shrimp (21-25c), peeled and deveined
3-4
Thai chilies, thinly sliced
8oz rice noodle
oz Rice noodle, soaked in warm water 10 min prior to use

Onion, sliced
1
Carrot, thinly sliced into coins
1
Red pepper, thinly sliced
2
Eggs, beaten
2
Scallions, roughly chopped
2
tsp Oil
Salt & Pepper, to taste

Sauce

tbsp Fish sauce
1
tbsp Lime juice
1
tbsp Soy sauce
1
tbsp Oyster sauce
1
tbsp Tamarind puree
1
tbsp Brown sugar

Garnish

Bean sprouts
Cilantro leaves
Lime wedges
1/2
cup Toasted peanuts, chopped

Instructions

Instructions:
  1. Combine all ingredients for sauce in a bowl, mix well and set aside.
  2. In a wok or large skillet on medium-high heat add 1 tsp oil.
  3. Then add shrimp, salt, pepper and sauté until golden brown, approximately 60-90 seconds.
  4. Remove shrimp from the pan.
  5. Add onion, carrot, red pepper, salt, pepper and mix well.
  6. Once vegetables begin to take on colour add Thai chillies, sauce and drained noodles. Mix well.
  7. Scramble 2 eggs in asepaaraate pan.
  8. Once all ingredients are combined add shrimp,  scallions and eggs and toss to combine.
  9. Serve immediately garnished with bean sprouts, cilantro, lime wedges and chopped peanuts.
