Saucy black beans

Ingredients

1 tbsp
canola oil
1
onion, finely chopped
1/4 tsp
salt
2 cloves
garlic, minced
1 tbsp
chili powder
1 tsp
cumin
pinch
cinnamon
1 can
black beans, drained and rinsed

Instructions

  1. Heat oil in a small pot over medium. Add onion and salt and cook for about 5 minutes or until softened. Add garlic and cook another minute. Add spices and cook 30 seconds. Add beans, then add half a can of water. Bring to a boil then simmer, stirring often, 10 minutes.
  2. Purée with an immersion blender if desired.
  3. Serve over rice or in taco shells or wraps with fresh tomatoes, onions, avocado and shredded cheese.
