A healthy winter salad

A salad to keep your spirits up this winter.

Ingredients

2-3 cups
finely sliced either Kale, cabbage or Brussel sprouts
1/4 cup
finely sliced red onion
1/4 cup
walnuts
2 tbsp
green pumpkin seeds
1/4 cup
cooked barley or another whole grain
1/2 cup
white beans
1/2 cup
roasted sweet potato, optional
1-2 tsp
ground flaxseed
1-2 tbsp
apple cider vinegar

Instructions

  1. Plate this main course salad starting with the kale, cabbage, Brussels sprouts.
  2. Sprinkle with onion.
  3. Toss walnuts and pumpkin seeds over top.
  4. Sprinkle with barley.
  5. Top with beans and sweet potatoes, if using.
  6. Sprinkle with flaxseed and drizzle with oil then the vinegar and serve.
