Baked chicken wings with double-fried fries

Ingredients

1
lb full chicken wings
1/3
cup breadcrumbs
2
tablespoons grated parmigiana
1
teaspoon rosemary, chopped
heavy
salt and pepper

Fries

3
large Yukon Gold Potatoes
4
cups canola oil
heavy Kosher salt and pepper

Sauce

2
tablespoons honey
1
tablespoon grain mustard
1
tablespoon Sriracha
Crumbled blue cheese, (optional)

Instructions

Wings Method:
  1. Preheat oven to 425 convention
  2. Toss breadcrumbs, parmigiana, Rosemary and salt and pepper in a large bowl. Mix, toss whole wings and give a light crust.
  3. Place wings on a baking rack lined tray and bake for 21-24 minutes or until wings are golden and crispy.
  4. Remove and plate.
  5. In a small bowl mix, honey, mustard, and hot sauce.  Drizzle over wings while still hot and serve.

These delicious wings pair perfectly with these crispy fries!

Double Fried Fries Method:
  1. Cut potatoes into 1/4 inch strips
  2. Soak in water and a splash of vinegar
  3. Bring oil up to 325.  Remove 1/2 fries from water and let dry.  Blanch in oil for 4 minutes and remove onto a tray. Repeat with the remaining half.
  4. Bring oil up to 365. Fry 1/2 of the blanched fries until golden and floating. Remove and toss with salt and pepper. Repeat and serve.
