Grilled calamari with warm olives and herbs

Crispy on the outside and tender on the inside, this fresh calamari is gently seared on a sizzling grill and doused in lemon juice and garden herbs to bring out its full flavor.

Ingredients

squid, cleaned and and sliced 85% through, leave the back so they stay attached
1 cup
sliced green olives
1 cup
sliced black olives
1 cup
cherry tomatoes
1/2 cup
quality olive oil
1 handful
fresh basil, torn
1
lemon, juiced
1 handful
fresh herbs, (dill, mint, parsley, chives) roughly chopped
Salt and pepper

Instructions

Season calamari with olive oil and salt and pepper. Place on hot grill, turn after 90 seconds and repeat.  In a small pan gently heat olives, tomatoes, basil and olive oil. Place chopped herbs on a large platter and top with grilled calamari. Finish with warm olives and a splash of lemon.
