Baked Home Fries

The healthy take on a family favourite.

Ingredients

2 lb
unpeeled Russet potatoes, cut into long wedges 1/2-inch
2 tbsp
olive oil

Instructions

  1. With the rack in the middle position, preheat the oven to 400°F (200°C).
  2. On a non-stick baking sheet or a sheet lined with parchment paper, combine the potatoes with the oil. Season with salt and pepper. Arrange the potato wedges skin-side down.
  3. Bake for 45 minutes or until golden.

Delicious with aïoli (recipe p. 23).
