Scrumptious chocolate chip and prune cookies

This snack is a triple treat as it's gluten free, high in fiber and yes... they are delicious!

Ingredients

1-¾ cups
almond flour
¼ cup
flaxseeds
12
pitted prunes
1 tsp
baking soda
2 tablespoons
grass fed butter
1
organic egg
3 tbsp
maple syrup
1 tsp
vanilla
½ cup
mini chocolate chips

Instructions

  1. Pre heat oven to 350.
  2. Rough chop prunes and add to food processor.
  3. Combine almond flour, flaxseeds, prunes and baking soda to bowl and mix.
  4. Melt butter and combine with egg, maple syrup and vanilla.
  5. Add dry and wet ingredients together.
  6. Stir in mini chocolate chips.
  7. Use spoon and spoon out cookies on oiled baking sheet.
  8. Bake for 12 minutes, remove from oven, allow to cool.
